These Keto Linzer Cookies are so cute!

My Mom bought me this simple little Cookie Cutter Kit from Amazon last month for my birthday and I had wanted to find a recipe to use it for.

This dough is absolutely PERFECT for these cutters and really any other cookie cutters you want to use.

I punched out a bunch of each little designs and then sandwiched that together with one solid sugar cookie so you could fill them with jam and see it peaking through the little punched out opening.

These are just like the ones my Mom makes every Christmas and honestly taste just as good! The cookies have a beautiful texture and come out perfect every time.

The colour of the pale, almost white dough against the red jam gives them a perfect Christmas look.

The jam filling in these keto sandwich sugar cookies can be raspberry or strawberry but feel free to get creative and try adding a little cream cheese and sweetener or some blueberry or apricot jam.

I use the No Sugar Added Smucker's Jam for this recipe, which is available in Canada. If you are in the United States, any low sugar jam will suffice.

The dough for this Keto Linzer Cookies Recipe is actually based off of one of my original Keto Shortbread Cookie Recipesand then is altered slightly by adding an egg to make it more pliable and easy to roll out.

This really is the only difference between shortbread cookies and sugar cookies in general!

This sugar cookie dough uses some common keto ingredients including ; almond flour, coconut flour and xanthan gum.

The Almond flour provides our base for the cookies and gives them sub substance and richness with its higher fat content while coconut flour helps the dough to be more absorbent of liquid and slightly lighter than if we were to use almond flour alone.

The xanthan gum is used to bind all of the ingredients together and provide a small amount of elasticity as gluten would in regular sugar cookie recipes. This helps the cookies to not be crumbly and to have a smoother overall texture.

Another ingredient this recipe contains that's slightly less common in keto baking (but my absolute FAVOURITE) is arrowroot starch.

Arrowroot starch is used in these Keto Sandwich Sugar Cookies to provide a lightness and almost melt-in-your-mouth quality to the dough.

Cornstarch is often found in traditional melt-away shortbread cookies and is also a great substitute for arrowroot starch if you don't have it. We use a small amount in our recipe to keep the cookies low carb.

In terms of sweetener in these Keto Jam Sandwich Cookies, I used my favourite powdered monkfruit/erythritol blend from Lakanto.They recently changed the packaging on this and it now says “2x as sweet as sugar” when originally it said 1:1.

I'm not sure if they changed their blend or just re-named it because I always found it sweetener than sugar initially anyways so just be careful when adding this, maybe start with less and see if they need more.

(3/4 cup is generally a perfect amount for any sweetener though. You can use granulated monkfruit/erythritol sweetener or any other sweetener you prefer).

Tips For Making Keto Jam Sandwich Cookies

  • If you don't have a Linzer Cutter, you can also use a small cup and a bottle cap or round cookie cutters to cut out the cookies and the centres.
  • Feel free to use different jams, such as strawberry, blueberry or apricot. You can even mix a few tablespoons of jam with some cream cheese for another delicious filling.
  • If you don't have arrowroot starch, you can also use cornstarch or leave it out altogether and add an extra tablespoon of almond flour (just note that your cookies may have just a slightly different texture)
  • If you don't have xanthan gum you can still make these cookies, they will just be a bit more crumbly since xanthan gum helps to bind all of the ingredients together.
  • These cookies also look cute topped with a sprinkling of powdered Swerve sweetener if you have it!

  • Store these cookies in an airtight container in the fridge for up to 6 days OR freeze in an airtight container between layers of wax paper for a future snack.

  1. Pre-heat oven to 350*F.

  3. In another bowl, whisk together all of your dry ingredients including; almond flour, coconut flour, arrowroot starch, xanthan gum and salt.Keto Linzer Cookies Recipe (10)
  4. Pour the dry ingredients into the wet and stir well until the dough becomes thick and everything is incorporated together.
  5. Form your dough into a circle and then roll out flat between two sheets of parchment paper to the thickness you want your cookies (they won't change in much in the oven).
  6. Using a linzer cutter or cookie cutters, cut whole cookies (with now center hole) out of half of the dough. (Re-roll scraps when you need to)
  7. Then add the little attachment for the center cut-outs that you prefer and punch out the other half of the cookies. Basically you should have. equal amounts of cookies with cut-outs and solid cookies with no center cut-outs. Continue to re-roll any dough scraps and repeat the process until all of the dough is used up.
  8. Place the sugar cookies on a parchment-lined baking sheet and bake them for 7-8min. The should still be light in colour and will set as more as they cool. Let them cool completely before attempting to fill them.
  9. To fill the cookies, take one solid cookie and one cookie with a center cut-out and top the solid cookie with a small portion of jam. Sandwich the cookies together as you would oreos so you can see the jam peaking through the center. Serve immediately or chill/freeze them for later. Enjoy your Keto Sandwich Sugar Cookies With Jam!

Ingredients

  • 3/4 cup salted butter softened 180g
  • 3/4 cup powdered monkfruit/erythritol sweetener 144g
  • 1 egg room temperature
  • 1 1/4 tsp vanilla extract
  • 1/4 tsp almond extract optional
  • 1 1/2 cups almond flour 168g
  • 1/2 cup coconut flour 56g
  • 1 tbsp arrowroot starch 8g or cornstarch is OK if you don't have it
  • 1/2 tsp xanthan gum
  • 1/8 tsp baking powder
  • 1/8 tsp salt 1/4 tsp if using unsalted butter
  • 6-7 tbsp no sugar added jam I use Smucker's

Instructions
