What Makes This Recipe Great

I’ve done it! I’ve found the perfect, crispy Keto French Fries! The carbs in regular french fries are just SO high, and don’t go with the keto diet. My recipe for low-carb keto fries is made from the root vegetable rutabaga and tastes just like the real deal.

I’ve seen so many recipes out there and have tried and tried to find something similar to the delicious french fries we all know and love. But until now, low carb french fries like jicama fries, almond flour fries, coconut flour, turnip fries, etc., just haven’t hit the spot. They don’t have the right taste or texture.

Enter, the rutabaga! This root vegetable is pretty easy to find at local grocery stores, and one serving of these delicious low-carb fries is just 93 calories and 5 grams of net carbs!   • Rutabagas: Out of all the keto vegetables I tried, rutabagas are the winner. They hold their shape, get crispy edges when roasted, and taste really similar to sweet potatoes. Turnips were my second favorite, but they get a little wiggly. They don’t hold that fry shape when you pick them up. But have a flavor more similar to regular potato fries.
  • Avocado Oil & Salt: This is my go-to oil for these keto fries, but you could also use olive oil if you prefer. Salt them to taste.

Step-By-Step Instructions

I like to bake my fries in the oven instead of deep frying them. To get them extra crispy, I love using this sheet pan or cookie sheet with its wire rack over it. It allows the air to circulate all around and prevents the fries from getting soggy. These have the same perfect texture as traditional fries, with a fraction of the carbs!

  1. Heat your oven to 425ºF with the oven rack in the middle. Line a rimmed baking sheet with parchment paper for easy cleanup. Set in a wire baking rack.
  2. Toss the rutabaga fries in avocado oil. Lay the fries in an single layer. Season with salt.
  3. Roast for 40-50 minutes until tender and getting crispy.
  4. Serve these keto fries warm with your favorite keto dipping sauce like ketchup or ranch!

  • Wire Rack: these keto fries turn out the crispiest when cooked on a wire rack, allowing the air to circulate around the french fry. You can cook them directly on the baking sheet if you don’t have an air fryer. You may need to toss once or twice while roasting for even cooking.
  • Air Fryer: You can make these keto fries in your air fryer. Just toss them in the oil, place them in the air fryer basket, and air fry them at 380ºF for 20-30 minutes.

    In some parts of the country, people call rutagbagas – turnips. Turnips are purple and white with a white flesh. Rutabagas are yellow and brown with a yellow flesh. Which one are you referrering to?

    Where are you getting the nutrition info for this? When I google rutabagas it gives me 33g carbs with 9g fiber. I much prefer your calculation lmao but I want to make sure I’m not looking at the wrong thing.

    4 months into a very successful Keto diet and being a Potato lover do miss fries the most :( i have tried maybe 6 batches of Corabi, Rutabaga both and both seem to end up soft and overly sweet (like sweet potato) . Nothing seems to end up with a fries that can stay horizontal if you pick up on one end . i have cut them from 1/2 down to 1/8th inch and the thinner they get the sooner they need to come out of the oven else they go black. i always use Costco brand Avocado Oil as i am okay with that taste. I have tried my Ninja Airfryer which makes awesome chicken wings but seems to do nothing to making fries crispy

    what am i doing wrong here?

      Well you have me stumped Tom! I am not sure why your fries are coming out so soft. Make sure you are baking them on a wire rack so the air circulates and you will get a very crispy french fry. Also toss them completely with avocadooil to help the crisp up.

    at 72 carbs per serving, its not even close to being Keto. I eat less than 20 carbs per day, sometimes less than 10, some days 0. Which is the goal of keto, not having carbs forcing your body to burn ketones instead. You should change the name to low carb, but its not keto.

    I totally want to try these fries. I had one question, I’m allergic to avocados, so what kind of other oils can you use besides avocado oil? Been trying to eat healthier for my pregnancy and just in general.       While the picture looks similar to a turnip, and it is easy to confuse them, those in the picture are definitely rutabagas. The taste, texture, and color are slightly different. Rutabagas have a more “light burgundy” color around the tops and turnips have purple. You can also make rutabagas into keto “mashed potatoes” Due to the texture, mashing does not work with turnips, although they do make a good potato substitute in stews.

      I have a video on the recipe showing how I cut them Linda. Take a look at it. To cut the fries cut the top and bottom off the rutabaga. Then cutting from the top to bottom you cut into about 5 pieces, then cut those pieces into planks. You can also cut the round part off of the rutabaga to make it more square (like you would a potato) and cut those into planks. I WISH there was a tool to cut a perfect fry. Practice makes perfect!
